Minty Asparagus

A perfect summer side dish, it’s delicious paired with your favorite fish or a grilled bread sandwich.

Heat a couple pats of butter in a large pan until golden (I love my OurPlace pan). Quickly rinse a bunch of asparagus and snap off the hard ends and toss them in the pan. Cover for about 3 minutes or until the spears turn bright green and the tips char a bit. Season with salt and pepper to taste. Arrange on a plate and sprinkle 2-4 thinly sliced mint leaves. For an extra kick add a couple grates of lemon zest and a splash of fresh lemon juice.
