My famous roast chicken!

In my commuity I’m the Queen of no-recipe-recipes. This is simply due to the fact that I get confused by too many steps, busy instructions, and I like to ensure I’m done cooking a meal in 30 minutes or less.

A dish I often make for my family is a whole roast chicken; It’s simple, quick, and economical. Throw some potatoes on the tray as well and you’re 2/3 of an Ideal Plate there (serve with a simple salad with your favorite oive oil dressing and you’re good to go!) And if you have leftovers you can have some delicious lunches for days to come.

Paola’s Roast Chicken

1 whole 3-4lb chicken, rinsed and dry

Seasoning: Mix 1tsp smoked paprika, 1tsp onion powder, 1tsp garlic powder, 1tsp ground cumin, Salt and pepper to taste

Preheat oven to 400º as you rub dry seasoning all over your chicken. Place chicken in hot oven and roast for 1 hour. Once done let it rest for 5 minutes before carving. Serve with your favorite roast veggies (potatoes, zucchini), and a simple side salad.
