Cheezy Bites
I don’t have a mixer – I simply don’t have the space in my kitchen (I know, NY apartments right?), so when I’m in the mood to bake I often go for easy recipes that don’t require the extra hardware.
Enter “cheezy bites”, a riff on Brazilian pao de queijo, a snack I find simply addictive. These are a great grain free snack, or a wonderful breakfast option (they pair well some scrambled eggs and a hot chocolate).

** Ingredients preferably organic – as available and whenever possible.
Serves 4
INGREDIENTS
1 egg
1/3 cup olive oil
2/3 cup milk
1 1/2 cups tapioca flour (Bob's redmill is pretty good).
1/2 cup (packed, about 66 grams) grated cheese (feta cheese (no need to grate), fresh farmer's cheese or parmigiano)
1 teaspoon of salt (or more to taste)
Mini muffin tin
DIRECTIONS
Preheat oven to 380°F. Oil the insides of the mini-muffin tin.
Put all of the ingredients into a blender until smooth.
Pour batter into prepared mini-muffin tin, not quite to the top; leave about 1/8 inch from the top.Bake in the oven for 15-20 minutes, until puffy and just lightly browned.
Remove from oven and let cool for a few minutes.
Scoop them out and enjoy warm.
** please note these will not be totally round, they will be a bit flattened as they cool but still delicious.
