A childhood favorite recipe: Maduros!

I don’t believe in "cheat" meals, there are no strict rules in the way I teach you to eat. And I don’t believe in treats because you don’t need to "earn" your food either.

I believe in allowing yourself to have a “food hug” when you truly want it, in a way that feels pleasurable and joyful, without guilt or shame.

The dopamine and serotonin surge we get from a few squares of chocolate, or a piece of cake, or a slice of pizza, is more beneficial to your body than stressing over restriction and perfection.

Today I share a childhood sweet-savory baked bit of joy, maduros. These are sweet plantains you must let over-ripen on your counter before roasting…

Roast Maduros

Preheat oven to 375ºf. Peel and slice 2 VERY ripe platanos into 1/4" diagonal slices, cover generously with olive oil and a sprinkle of salt. Roast for 25min or until golden brown, flipping half way through, and adding a little extra oil to keep the platanos juicy. Serve with your favorite Ideal Plate.
