Recipe: Raw Zucchini Salad

I am absolutely obsessed with this salad (and so is my 3yo nice Valentina from what I hear).

The high fiber combination of the raw zucchini ribbons, paired with the crunchiness of the radishes and raw asparagus (an amazing pre-biotic) make for a happy, healthy gut. Nutritious, refreshing and quick to pull together, you'll be eating it for days, I promise.

* Ingredients preferably organic – as available, and whenever possible.

Serves 2



1 cup thinly sliced raw zucchini (about 1 small zucchini)

1 cup thinly sliced raw radishes (about 7 radishes)

1 cup sliced celery leaves / greens

1/2 cup sliced raw asparagus

1tsp sesame oil

1tsp coconut sugar

Juice of 1 lime

Flaky salt to taste (Maldon or sea salt)



Whisk together sesame oil, coconut sugar, lime juice and salt in small bowl.

Combine all vegetables in a large bowl and toss with dressing.

Refrigerate for at least one hour.
