Recipe: Detox Beet Salad

Beets are a true super-food. They aid the body in detoxification of fat from the liver, are an anti-inflammatory vegetable and even help improve blood pressure. In this salad they are used raw and are definitely the star of the dish. Complemented by savory celery (high in antioxidants), a bit of a kick from red onion (helps control blood sugar), the tanginess of limes (improved digestion) and a dash of olive oil (I mean, olive oil is gold) this is as tasty and as healthy as it gets.

** Ingredients preferably organic – as available and whenever possible.

Serves 2

 

INGREDIENTS

2 medium sized beets

3 celery stalks

1/4 of a medium sized red onion

Juice of 1 lime

2tb extra virgin olive oil

Salt and Pepper to taste

 

DIRECTIONS

You can slice the beets very thin, or grate in mandolin or wide grater.

Slice Celery and onions into very thin slices.

Combine sliced vegetables olive oil, lime, salt and pepper and let marinate in the fridge for at least an hour (and up to 24hr).

Serve and sprinkle with additional flaky salt.
